Ingredients
12 slices of ham or
turkey
7 eggs
1/4 cup of milk
1/4 to 1/2 teaspoon salt
2 medium sized
tomatoes--diced
diced onion or chives to
taste
1/2 cup shredded cheddar
cheese
Directions
Preheat oven to 350
Spray a 12 cup muffin
tin with cooking spray.
In a bowl, combine the
eggs, salt, and milk. Beat until well combined.
Place a slice of ham (or
turkey) into each muffin tin cup. You want to use the sliced meat as a
mock muffin tin liner, so let the edges peak out above the top of each cup.
Put a little bit of
tomato and onion into each cup--try to divide them equally.
Pour the egg mixture
into each cup, but do not fill the cups all the way. Leave about 1/4 inch
unfilled. Do not worry if some of the egg mixture goes under the sliced
meat, it will be just fine!
Top with shredded cheddar
cheese.
Bake for 18 minutes, or
until set.
Let cool five minutes or
so, and then enjoy!
