Roasted Vegetables


Ingredients

    4 med-large zucchini
    6 small yellow summer squash
    1 lb. fresh whole mushrooms
    12 oz. bag of petite carrots
    1 large green pepper
    1 large red pepper
    1 tsp. garlic powder or granulated garlic
    1 tsp. onion powder
    1 tsp. rosemary
    1 tsp. thyme
    1 tsp. seasoned salt
    1/4 cup olive oil

Directions
Preheat oven to 450.
Put all vegetables into a large mixing bowl.
Sprinkle in the spices and coat with olive oil. Toss evenly to distribute.
Pour onto a baking sheet and cook uncovered for 40 minutes, stirring every 10 minutes or so.  
Veggies should be cooked, but not mushy!

This recipe makes 12 one cup servings.
